How to make Piment Crazé – A Mauritian Recipe

Let’s make the tastiest homemade Mauritian Piment Crazé.

Ingredients:

150-500g Green Chillies

3 Cloves of Garlic

50ml Vegetable Oil (Keep 1 Tbsp aside)

Half an Unwaxed Lemon

1 tsp Salt

1 tsp Sugar

Equipment:

Blender

Airtight Glass Jar

Preparations:

Sterilise the air tight glass jar.

Steps to make Mauritian Piment Crazé (Crushed Green Chilli):

  1. Wash the chilli, remove the stalks & place the chilli into the blender.
  2. Wash the lemon and add it into the blender (do not remove the rind).
  3. Peel the garlic and it into the blender.
  4. Add the salt & sugar into the blender and blend the ingredients until they resemble a smooth paste consistency.
  5. Pour the Piment Crazé into a sterilised, air tight glass container jar.
  6. Mix 1 Tbsp of vegetable oil into the Piment Crazé.
  7. Pour the remaining oil on to the top of the chilli.  Ensure that the top surface of the chilli is covered with oil in its entirety as this is important for preservation.

Piment Crazé can be eaten with absolutely everything… and often is.
